Mashed potatoes are a yummy, delicious comfort food. They are so warm and creamy and….full of starch! If you are trying to watch your calories or if you are trying to keep your blood sugar balanced then mashed potatoes may not be on your food list anymore. But, never fear…..
Mashed Potatoes Substitute is here! Meet, Mashed Cauliflower….
Mashed cauliflower might not be exactly the same as real mashed potatoes. But it really is a great mashed potatoes substitute. And, as a bonus, it is full of fiber. It is low in calories. And, it is super easy to make!
Cauliflower (you can use a frozen bag of florets or a fresh head of cauliflower)
2 tbs (or however much you want) of butter
Salt and pepper to taste (optional)
- You will want to steam your cauliflower first. If you have frozen florets, you can put them in a microwave safe dish and follow the instructions on the bag. For a fresh head of cauliflower, you will need to steam it on the stove until it is very soft. This usually takes at least 20 minutes.
- Once your cauliflower is good and cooked, you will want to add your butter and if you choose cheese, salt and pepper.
- Get out your masher and get to mashing until the cauliflower is finely mashed.
